Laura Foo is not just a passionate baker – she’s a custom caker, recipe developer, content creator @lozfozbakes, and the 2023 winner of The Great Australian Bake Off. Her journey is a testament to the power of creativity and following your passion.
When the pandemic hit in 2020, Australians turned to hobbies in droves – gardening, running, online chess – and for Foo, the Melbourne lockdowns served as the perfect incentive to ignite her passion for baking.
After narrowly missing out on being cast for the 2022 season of The Great Australian Bake Off, but encouraged to apply again for the next season, Foo spent the next year training in her kitchen.
“I basically came up with my own baking boot camp,” she says.
“I had lots of time on my hands, so I could try techniques and bakes that I’d never tried before.”
Foo's love for baking began in her childhood, influenced by her food-centric upbringing in Singapore.
Growing up, she was deeply inspired by the baking prowess of her maternal grandmother, who frequently made elaborate feasts.
“She would make hundreds and hundreds of biscuits and cakes for Lunar New Year to give out to family and friends,” she says.
It wasn’t long until Foo was baking cupcakes and brownies to share with her friends at school.
The Bake Off experience
In 2022, Foo reapplied to The Great Australian Bake Off, and this time she stepped into the Shed as a contestant. She describes it as a whirlwind experience.
“You go from being in your own kitchen, in a safe space… to having 12 cameras on you… there’s a lot going on,” she says.
“There’s 11 other bakers in the space at the same time, you’ve got to think about smiling and not looking panicked because you’re running out of time and your chocolate isn’t tempering properly.”
The hardest part, she says, was answering questions in the middle of baking.
“As it went on, it got a lot easier… you develop this relationship with the fabulous crew, and you feel really at home and at ease.”
Despite the intensity, she found comfort in the show’s supportive atmosphere.
“It has a reputation for being the nicest show in the industry. It feels as a competitor exactly as it looks, which is just lovely. It’s very, very supportive. I learned a lot from the judges and the other contestants, and just had a ball.”
Baking with purpose
Foo's ultimate joy in baking comes from sharing her creations with others.
“They have an immediate and visceral reaction to it, and I just love that,” she says.
There’s a bit of foodie in everybody.
After her victory on The Great Australian Bake Off, Foo established LozFoz Bakes, focusing on custom cakes and desserts.
“I always try and get to know my clients really well and create a special moment for them,” she explains.
Her business also includes social media content and recipe development, pop-up events, and private catering, allowing her to engage with the community and share her love for baking on a larger scale.
Making magic
In addition to running LozFoz Bakes, Foo works full-time in management consulting. She says her academic background in marketing and economics, as part of her Bachelor of Commerce degree, combined with her professional experience, have helped her to navigate the complexities of building a brand and business.
“Having picked up a bunch of tools, frameworks and ways of thinking about things, and then being able to apply them to my own brand has been such a blessing,” she says.
Foo is also developing a branch of LozFoz Bakes that will serve as a creative consultancy for food businesses.
“I’m starting to bring those two worlds together – the creative side, with the business and commercial acumen that I have honed in my corporate career – to support food businesses.”
"I’m loving it so far, it scratches both parts of my brain, and I also get to apply both sides of my life into someone else’s success.”
Being able to bridge corporate and creative fields has given Foo a unique perspective on the importance of combining her skill sets, as she can speak the language of both.
“A theme of my food and my corporate career is storytelling, and bringing opposing dualities together.”
For me, it’s bringing food and business together. I think there’s magic in that.
